I'm starting to see a UDS. Your going to love it. I sugest you get some yard bird. After you get it all seasoned. throw the yard bird on and see how she cooks. Take some time to learn how she responds with temp. Then work your way up from their.
I started real slow on the learning curve with mine. I threw a brisket on dialed in the heat and went to bed.

Hows your build going?
I used a half basket and a lot of dead tree limbs. While i was seasoning it I played with the temps. See how it holds with 1 vent open. Pick a temp and try to get to it.
Then hold it for a while. Pick a new temp and go to it.
Play with it while your seasoning. Make a game of it.
Just fill your basket up maybe half way high... You won't need a full one. After you fill it just scoop out a handful of coals from the edge of the basket, light them and put them back in the same spot you took them.
I love lighting with this method because when I'm done I always have fresh unburned coals left behind for the next cook... and the partial burnt are my starters the next cook.
Yes put spread wood chunks out in there for seasoning.
That was my next question, how to start it.

Right now it's just a fancy burn barrel. Cook a hot dog on it. Then your in.
