Just bought Jeff's book

    So I have been interested in smoking for sometime now, just picked up Jeff's book and found an Oklahoma Joe Highlander at my local Wal-Mart for $230.00 looked like a good buy. Any suggestions on Mods and a good place to pick up accessories. I would like to smoke some ribs this weekend, any tips would be great for a newbie just starting out. Also if you have a good recipe, rub for ribs would love to give it a try. Thanks

    Welcome KMC, you want to learn to smoke things.

    These folks will love helping you to smoke things

    Go up and look in the right hand corner, you'll see

    a magnifying glass looking thing, type in 3, 2, 1 ribs

    it will  get you going right.

    The very best way is to jump right out into the 

    forum go to smoking meat and other things.

    After you hit that go down to pork ask your

    question in there.

    You will get answers, I just don't know enough yet

    to be telling anybody how to do things.

    Your best bet now would be to purchase Jeff's rub and sauce recipes. They are very user friendly and can be tweaked to suit your personal taste. You can add or take out a little heat and the same with a little sweet.

    As far as ribs are concerned, I buy swifts loin back ribs from Costco. They are 3 to a Cryovac. The membrane is already removed and they are very meaty. I slather them with yellow mustard and dust them with jeff's rub. I smoke them with cherry chunks at 260-275* for about 3 - 31/2 hours and check for doneness by the bend test. I never foil my ribs. When they are giving me a good bend, I sauce them with Jeff's sauce and let it set for about 15 minutes and then do that a second time. I take them off the smoker and let them rest on the counter for 30 minutes. Then slice and serve.

    Will do thanks for the info Joe. What is the idea behind people wrapping the ribs in foil?

    I used to wrap ribs, as did a lot of folks that no longer do it. They say it makes them tender an fall off the bone. I tend to think that it makes them mushy. I don't want my ribs to FOTB. I want them to have a little tug, pull, bite or whatever you choose to call it. My friends and family really like my ribs and that's my $0.02.
