Injecting hot wings

    Injected and fire roasted 55 wings.   If anyone is curious  they aren't as messy this way.  I'd describe them as more of an oven baked but with smoke and fire taste.   I sprinkled them with Tony's and brushed sauce toward the end.

    Go International . try Soy Sauce mixes , Tariyaki , even Liquors .

    Southwest flavors with mild Chiles (like Ancho ) , and Citrus infusions .

    I'm a Frank's fan and usually load them up with that (if I inject at all) .

    One thing to try that I love and don't see very often is adding pineapple bits to your sauce.  Personally I use a Jerk seasoning of some sort and this past weekend I used BW3's Caribbean Jerk sauce and chopped up some fresh pineapple to mix in with it.  The sweet from the Pineapple matches the spicy jerk seasoning and it is pure euphoria!

    Jerk Seasoning I use frequently (makes about 1/4 cup)

    2tbs minced onion

    2.5 tsp dried thyme

    2tsp allspice

    2tsp BP

    1/2tsp ground cinnamon

    1/2 tsp cayenne

    1/2tsp salt
