Improvised smoking

OK, so my smoker is currently down due to needing a couple minor repairs. But been awhile since I smoked anything and I decided that today I was going to try.

Pulled the cooking grates and heat shields out of the gas grill. Set on grate sideways on the middle 2 burners, and set the water/chip pan from the smoker on this grate.

Fired only the 2 middle burners, on high until I had decent smoke, then down to low. Held right at 250 with liquid in the pan.

Things turned out delicious, will be doing this again.


Forgot to mention, was a half pork loin. 4 hours had it up to 180F internal and it was juicy and delicious! Served that with my homemade potato salad, and my award winning BBQ beans!
