I am getting the itch....

    It has been almost three weeks since my last smoke and to top it off I have been having problems with a particular family mater I have vented about on here before.  So what is the easiest way to make things feel much better.  Yard-Bird!!

    Ok, now this looks very interesting to me. I have never brined any type of meat. So dont leave out any details!!

    OK this is the Brine I use on BBQ chicken.  I like it because it gives the meat a sweet taste without bbq sauce. 

    1 Gallon Water

    1/3 cup kosher salt

    1/2 cup dark brown sugar

    1 TBS Tony Chachery's

    1 tsp cumin

    4 cloves of Garlic

    2 bay leaves

    I soak for at least 6 hours I like 8-12 hours the best. 

    Here are my Birds all dressed up and ready to party...

    This is gonna be more of a grill than a smoke I am thinking 425 for 60 minutes.....

    There you go...nice. I have one in the brine right now been in there 18 hours....going into the smoker in the morning....Love smoked brined injected yardbird...

    Picked up my birds today. I got a question for u on starting this brine process. Should I poke these birds with a ice pick or just soak them untouched overnight?

    Just soak them overnight untouched.  The salt water will be drawn into the chicken through Osmosis.  Science and cooking......

    I just dunk them in the brine, waight them down, and let them soak
