Howdy, I'm a new member here from Central Texas. I received a New Braunfels Hondo smoker for Christmas. I am new to smoking meat, but I am very enthusiastic to do as much as I can. I would prefer to use wood, especially mesquite, since I have ready access to as much as I can cut and use. While I will be smoking anything I can, pork will probably be my main meat, because like mesquite, I have all of it that I can catch and dress. Beef and rabbit are two other meats of major interest. Largely because of info I found on this site, I have already ordered a Maverick ET-73 thermometer which will hopefully be here soon so I can begin smoking!
