Hello one and all from Mount Clemens, MI.  My name is Perry Hiltz, and I am long time lurker here at Smoking Meats.  Time to be on the front page so to speak.  I have been cooking for four years now and and after a lot of trial and error (well not all error) I have decided that I make ribs and pork to the point that I can make some money at this.

I am starting up a small mobile trailer based catering business using a 60" Vertical Reverse Flow Smoker from Abe's Smokers in Fraser Michigan.  I get the honor of picking up this bad boy today.  8 Racks of cooking space, water pan, and 500 pounds of insulated steel.


I initially started with a small 30 Vertical Electric Smoke Hollow smoker.  From here I moved to a Char Griller Dual 5050 Grill and Charcoal with an offset firebox.  I modified this to a reverse flow but found that like a lot of stick burners, it really doesn't hold heat well.  In order to minimize costs and fuel, I wanted an insulated box.  I am in the process of preparing an enclosed trailer to be a mobile kitchen and transport this new box around.  Looking forward to discussing things with everyone.
 
Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!
