Hi everyone!

Been reading the forum for a while now, so thought it was about time I introduced myself.

My name is Scott, I am from the UK but living in Bulgaria.  I have been working self employed in the oil industry in Europe and Africa for the past 9 years but as I am sure some of you may be aware its a little quiet now, so enjoying some time away from it at present :D

I have a 30" Masterbuilt vertical propane smoker (Had to get it shipped from US).  Also got Maverick ET733 probes and a thermapen based on recommendations from here.

Been smoking for about 6 months now and everything is going good - had to adapt the fire tray in the smoker as it was burning wood too quickly, added another water pan during the summer as temp would not go below 270oF.  Apart from that its a pretty good smoker.

I have a bar/restaurant here and looking at adding some BBQ to the menu - got a couple of questions about that but will save for a separate post.
