I found this site in my travels...searching for a new smoker. Tony, my New Braunfels Bandera is a champ but can be demanding trying to keep the temp right, my Sam's club gas grill is kindof my everyday go to grill right outside the kitchen door and my charbroil "big square grill" is a blast. I'm not sure I could be considered a Grill Master in this crowd but I have been smoking for going on 30 years, have built smokers out of pipe and pits in the ground, Have tried to smoke just about every food out there except jello, have considered competing but never pulled the trigger and am the best smoker in the world according to my wife ( and a few friends).

I was looking at gas or electric and ran across the traeger. My brother in law who ran BBQ restaurants in memphis told me to go with electric when I asked about gas or electric. We'll get into this in another place on the forum.

I live in the heart of dixie, Alabama...love to fish, hate to work...what more can I say?

Welcome jsanders.
Sounds like you have a pretty good grasp on things already.
If doing jello I would put the liquid in the smoker for about half an hour, fruit wood would work best then cool it

Don't know if that is something I would try or not. Maybe add some smoked pork cubes to the center like fruit cocktail?

Welcome to SMF. Smokers of all disciplines hang out here and exchange ideas. Yes, even those who use aluminum foil ... *ducking for cover*
