Figured I'd say hi..... I have smoked a few briskets and racks of ribs in the past as well as turkeys at T-Day, but nothing serious..... Having grown up in Washington State, I can smoke a MEAN Salmon. I currently have a Brinkman Bullet Smoker and a Lil'Chief Electric Smoker (for salmon)
My neighbor is a Demon on his smoker and does briskets great. I am trying to learn form him. I get him good sources of Pecan wood and he gives me recipes and secrets...

I live in Sachse, TX. NE of Dallas. I look forward to learning more here and would like to build a smoker in the future.

Tex-Hunter.... Yup, we are neighbors.... Might have to look you up for some smoke time.

I am on day 2 of Jeff's E-course. Has anyone done the mods he suggested for the ECB? I am going to move the legs to the outside and add threaded rod to hold up the firebox..... Any pics of the damper he suggests? I will check the other topics for info as well....

Too bad I didn't have my camera the weekend before last, I did a Wild Boar Ham and a Deer Ham over charcoal and Pecan wood. Sorry, no Q-view this time.....

Hi ya Byoung and welcome to the smf. As you've found out .... wealth of info here, whole bunch of friendly people too.

I have done some of the mods to my ecb. Moved the legs outside, done the charcoal pan mods, drilled holes and added legs.
Haven't added a lid vent yet.
It is lots easier to add and clean out charcoal by lifting smoker upand over the pan. The holes in the pan helps for a more complete burn too. I want to add a basket and some kind of rack to lift the coals off the bottom of the pan tho.
