Help - 3-2-1 Rib Recipe

  1. Well I am doing ribs for the first time and picked up some nice back ribs at Sams.

    I am doing 6 racks and downloaded the 3-2-1 method.  I was following it up to now.  I read another thread that Back Ribs should follow the 2-2-1 method.

    Well they were on the smoker for almost the full 3 hours!  I pulled them as soon as I read the other thread and foiled them with apple juice.  They are back on.

    So how sould I modify the 2-1 part of the recipe?

    Also, they will be ready about an hour before the guests arrive.  OK to put them in the warming oven?

    I'd do 3 - 1.5 - .5 at this point.  If you do a 3-2-1 it won't be awful, just extremely tender.

    I wouldn't keep them in the oven long.  The microwave is small and insulated, I'd keep them in there for the time being, then warm them the last 15mins in the oven before serving.  I also recommend using the oven broiler on them for a minute just before serving them.

    If these are baby back ribs, standard is 2-2-1. If you already did them for 3, try a 3-1.5- .5.

    This method is not rocket science but a starting point to find the way you like best.

    How about putting them in a blanket lined cooler like a brisket?
