Names Keith and I was curious about making Pastrami from Tri Tip using the old school method and I see I am not alone in this. I am well versed in the fine art of grilling and have smoked a variety of different meats: Beef, Fish and Pork. I have grilled everything meat even a few Wild Hog & Turkey,s. For now I am stuck in the Big City but my plan is to get back to where my skills are more practiced, Gold Beach, Oregon along the Rouge River, I belong there...... enough for now, later

Keith,

Welcome to SMF.  There are quite a bit of posts about Pastrami on the site.

Good luck!

Smoke ON!
