My name is Butch Thompson and I live in Honor, Michigan where the Great Lakes Salmon program all got started. Actually it got started at the Platte River state fish hatchery just east of town.
I've been grilling for years and I love it but I'm new to smoking, recently got a real good deal on a Brinkmann Gourmet. For the time being, I'm going to go slow and try reasonably small quantities of different meats, fish and foul til I "get my feet on the ground". Any advice will be greatly appreciated; I'm sure I'll be asking a lot of questions.
I'm about eight miles from Lake Michigan and guys are catching Chinooks right now, waiting for the Cohos to show up in the next few weeks. That said, I will probably soon be experimenting with methods of smoking salmon. Gonna try my first chicken tomorrow though.
Once again, thanks for any and all help, advice or criticism you may offer. I'm not afraid of constructive criticism so if you see me going wrong, please don't hesitate to tell me about it.
