Hello from Blue Springs, MO

  1. Hello,

    My name is Larry. My wife (of 37 years) bought me a Brinkmann Smoke 'N Pit last year. I am having a blast with it. I would like to learn more and become proficient at using it. I also have a six burner gas grill to play with.

    In the past year, I have had some successes and some failures - though still edible.

    I am just learning, so I am looking for all the information I can get to make my smoker cooking something that my family waits for.

    My greatest challenge to date has been in maintaining cooking temperature. I am going to try a charcoal basket next - Minion Method. The other thing that makes me crazy is making sure the meat is properly cooked so I do not poison my family and friends.

    I am sold on Jeff's rub, and use it exclusively.

    I have just joined the forum area, so I am anxious to chat and meet the people who enjoy smoking as much as I am.

    Maybe some of you all already know this, but one of the large STERNO cans works great to start the charcoal chimney. Careful not too let it go to long under the chimney. I am considering a small propane burner to do that.

    Better stop for now.

    Welcome Larry to the SMF. If you take a piece of newspaper or paper towel and soak it in cooking oil , ball that up in bottom space of the chimney your charcoal will light easily with no petroleum taste.
    You gotta love a woman that will buy you a smoker. [​IMG]

    LOL I've found that "failures" on the smoker can still be better than successes on the grill!

    Welcome to the forum Larry! I lived in BS my whole life before I moved to NC in the summer 2007. Where abouts do you live? Just curious, I grew up over off of 19th and Mic-O-Say, then lived over by South for a couple years in the new townhomes over there. Good to see the Springs represented on the SMF!
