Greetings from NJ

    Hey everyone! Just joined the forum and I thought I'd say hello.

    Here's a little background on me.

    I'm in Northern NJ and I've been cooking all my life, everything from comfort food to molecular gastronomy. I bought a smoker a few years ago and fell in love. If I can get my smoker to maintain temp, I'm outside smoking something every weekend. (My smoker is under about 2 feet of snow now, so I can't really get it to temp.) I've done pork butts, brisket, ribs, chicken, turkey, lamb, meatloaf, bacon, and probably a few things I'm forgetting.

    I've been using a vertical Lowes bought smoker, but I'm looking to step it up and I'm going to be buying a competition quality smoker within the next month or two. I'm hoping to spend the year getting used to the new rig, and start competing in 2016. I've spent all winter researching, and unless someone presents a very compelling argument otherwise, I'm probably going to pull the trigger on the Meadow Creek TS120.

    The wife is all for it, and the dogs don't argue when there's BBQ involved, so hopefully everything works out and I'll see some of you at some competitions in a year or so. In the meantime, hopefully I can pick up some tips on the new rig and help out some people getting started!

  5. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...

    Welcome digitale!  Have fun reading.  That TS120 looks like a great rig and quite an upgrade from a "vertical Lowes bought smoker."  Be sure to post Q-views of your trial runs while learning to master the new beast.  Don't forget pics of the tail waggin' peanut gallery too.  We love seeing happy spectators!

    Thanks for all the warm welcomes all.

    Not sure I'll be able to test drive the smoker, as I don't know anyone who has one, but every review I've seen puts it ahead of the Lang 60" in quality, which was my other choice. 

    There is one NJ competition, so I may try to get into that one this year if I get the smoker in time, just to see what it's like.
