Hallo!
I live for 27 Years in Florida and like to smoke Schinken like in Germany. Many times i try but it is not easy. I need help.

What kind of smoker do you have? What problems are you having. People here have many different types of smokers, many have all types or have had them over the years, ask questions and they will be answered that is what it is all about
 
RICH schinken is bacon-german bacon-and dang good stuff.very lean-kinda like we make here in SMF.welcome my friend to SMF.

Schinken is Ham, cold smoke. I convert a Frigidaire to an cold smoker and add an smoke generator from E bay. The smoke generator produce smoke but allot of soot an the meat test like soot. Hmm,any ideas ?
 
Smoke generator... Hmm..can you post a picture or describe it?
Sounds like an incomplete combustion problem- something I have suspected of some smoke generation units.

Hey people... what ever happened with that unit a couple tried here?
 
Bacon-German Bacon??? Now that sounds like something I gotta try!

Don't know what you have for a smoke generator, but it is not burning the wood completly, you need to give it more air. Is there some sort of air adjustment on the unit, if so, start wide open and crank it back if need to.
