First tri-tip today

  1. Last week's ribs came out pretty decent. Little salty on the rub.

    Today I try out a tri-tip. 2.5lb. Garlic pepper, garlic powder and a little salt.

     
  2. IT is at 120° after only 40 mins. My thermo tested at 209 in boiling water. this seems fast based on my reading
     
  3. Nevermind. Had the probe in too far. Pulled the probe out a bit. Now IT is showing 110°
     
  4. 140° in an hour and a half. Looks really good. I have it wrapped in foil right now. Will update with pics

    Looking good on the tri tip.  They don't have to rest as long as briskets, butts, and chuckies.  30 minutes to an hour is plenty.
