So this was my first time smoking some ribs. I didn't take a bunch of pictures but I will give you a run down of what I did. Started with a slab of St. Louis cut spare ribs. I trimmed them down a little. (There was a little flap of extra meat on it) then I applied a Cajun bbq rub that I got from our local butcher shop. I heated my MES 40 to 225 and the ribs went in. I did the 3-2-1 method. I foiled them
After 3 hrs and put some Brown sugar, honey , and apple juice in the foil. I cooked the extra meet clippings and pulled them out at this point and had for a snack. The rub was spicy! After 2 hours, I unfoiled, put some more honey and Brown sugar on top,and let it finish cooking. I passed the bend test with flying colors. Here is a pic of the finished product.
