First smoke in the Rival KC Smoker

    Well People I am finally smoking again. The kc smoker came in a few days ago and yesterday I picked up some good looking top round (first cut) It was thick and very good looking. On top of how sexy that meat looked it was buy one get one free!!! I didn't have alot of time yesterday so I kept it simple. A quick rub with Jeff's rub and the meat was ready.
    While it rested absorbing all that goodness that had been rubbed on, I set up my version of Dutches wicked beans. These two fit easily into the smoker. I could easily fit another chunka beef, pork butt or a fattie in there.

    The finished product. It was a bit smokey for me. Maybe that hickory I bought wasn't hickory? Or maybe I didn't have the vent open (slaps forehead) The top round wasn't a great chunk of meat but maybe with a longer cook it would have been better? The water evaporating from the pan was dripping onto the beans from the top. Any ideas how to prevent this?
    I think next time I will use less wood and make sure the temp is lower instead of hoping the dial is set right.
    Over all it wasn't a bad first try. I think with some work it will really turn out some good food. I wonder if the water tray has to have water in it?
    I like it and I know the future smokes will get better as I better learn how to use it.

    On the dripping issue, do you have some room to make a roof shaped foil tent above the beans? Foil obviously would still cause the water to collect, but should run down the sides.

  13. Hi Vlap,I just bought a kc smoker about a month ago to see how good it is since it only cost around $60 and I like it.
    I just did a pulled pork with it and it came out as good as the better smoker's.

    Did you have any trouble with the evaporated water dripping on the meat?
  16. I didn't have any trouble with evaporated water dripping on the meat,I also tried the "Finishing Sauce"I got from here and we really liked it.
    I see me using "Finishing Sauce" all the time.

    Did you keep the top vent wide open or closed. I had heard of the smoke being light so I closed it. I think that may have been my problem with this smoker...
  18. I lef mine all the way open but I am just experimenting with mine since I haen't used it much but it I think I'll leave it open again next time I use it.

    Well, it IS cute! And like any smoker, there's a learning curve. I wonder if the too smoky thing could be a function of how little airspace is left after you load it? it sure seems tight in there. Maybe yer on to something...vent the hell outta it next time. You should have plenty of heat to make up for it.

    It ain't cute...its practical...

    I think the vent stays wide open next time. It was just a bit strong smokewise and that will also allow the steam to escape.

    Although its small its very functional. I can get almost as much food in it as my brinkman vertical. It is going to come in real handy.
