I finally broke down and smoked my first fattie today. 1 lb of beef stuffed with fresh spinach, portabella mushroom, red bell pepper, tomato sauce, Italian 5 cheese blend, and bacon bites. The dang thing had a few blow-outs but the bacon saved the day
. I also smoked some ABT's (jalapeños stuffed with cream cheese, bacon bites, and granulated garlic). I ran out of 'real' bacon so I had to use some so-called turkey bacon for the ABTs. I couldn't fit all of the portabella and bell pepper in the fattie so I broke out one of my smokerable cast iron skillets and sauteed some chopped onion in butter. I threw in the left over portabella and red bell pepper and let it go for a little while. After that I threw the rest of the fresh spinach in the skillet and put the lid on for a few minutes to steam. Here are a few pics as is customary:

The family and I loved today's smoked meal. Mrs. Tanker and I have already discussed several options for the next fatty. I guess the possibilities are endless so we'll just have to wait and see.
