First CBB, only second time smoking, first time withQ-view

    This is only the second time we have smoked anything, and with Dude Abides help it came out awesome. We smoked a cbb yesterday. Enclosed are some pics. We soaked it in water for 8 hours, changing the water every couple of hours. Then lightly coated it with plain old yellow mustard so the rub would stick good. For the rub we dusted with Old Bay, then a good coating of Course Ground Black Pepper. Wrapped it in plastic wrap & put in fridge overnight. In the smoker at 5:30 AM. After letting it get to room temp. ( out of fridge 4:00 AM ). Smoker set to 225*. Took 6 hours to get meat to 165*. Put in foil with 2 oz. apple juice. Took 4 more hours to get to 195*. Out of smoker, another layer of foil. Wrap in towels & into cooler for 2 hours ( no ice ). Total time 12 hours. 5:30 PM: slice & put in rye bread with mustard ( Grey Poupon of course ). This was the best tasting pastrami we have ever eaten. The smokey flavor with the Old Bay & pepper was almost indescribable. The only thing I will change next time is I will do 2 of these at the same time, because this one won't last 2 day's.

    Congrats on your first of many pastrami smokes.
    Looks great! Old Bay sounds like it would be an interesting choice. Have to keep that in mind next time.
    Points for a great second smoke.
  4. I see that you have a mbe smoker with the glass window! What keeps the window clean. I would think that it would blacken up from even thin blue smoke over time and use.

    That's awesome Al.

    I feel like we're old friends with all those emails going back and forth. I was really hoping everything would turn out for you. Now that you've got a good one under your belt, you can start to play and share everything you've learned with others.

    I saw your email and I just got back into town so I came right here to take a look. My wife thinks I'm nuts.

    The pictures look great and so does your smoker. That window will dirty up in due time.

    I think in time the window will get smokey, but so far just a wet rag when it's still hot takes a lot of the stains off. Thanks again for all your help Dude!

    I just want to thank all of you who have helped me thru my first 2 smokes. Irishteabear helped me smoke my first spare ribs & of course The Dude helped me with the CBB. I can't believe how friendly & helpful you'all have been. The knowledge I have aquired in the last 2 weeks would have taken me years to figure out on my own. I think it's great that you long time smokers are willing to share your experience with a newbie like myself. I can only hope that in the years to come I will be able to help others the same way you folks have helped me.

    Fine job for your second try. I just scored 6 corned beef marked down to under a buck a pound. Looks like a big batch of pastrami is on the way.
