OK, not sure what category to put this in, but if Burnt Ends are listed under Brisket, I guess this will fit under Fatty's.

I smoked a couple Fatty's this evening in my electric smoker, one Cheeseburger style, one Mexican Taco style.  I had a clean foil pan underneath to catch the drippings. My Cheeseburger Fatty leaked cheese some. Got them pulled off and decided to clean up the foil pan to reuse before everything got cold.

Poured the extra hamburger/bacon grease off in a container and let the pan drain a while. I started scraping the almost burnt cheese off the side and bottom of the pan with a spatula before putting it in the sink for hot water and soap and thought, I wonder how that would taste? 

I tried a one half inch circle about one eighth inch thick of almost burnt smoked cheddar cheese with a thin layer of bacon grease still on it, all I can say is WOW.  I grabbed my beer and ate all the rest in the pan overabout a half hour period of time.  Talk about some intense excellent rich Smoked Cheese Candy.

Really need to figure out how to easily make a larger batch of this stuff.
 
  Hmmmmm . Sounds interesting!  I wonder, if you hot smoke shreaded cheese in a pan under a rack of bacon...to the point where the cheese just melts... My arteries are clogging just thinking about it!
