Went to the grocery store with my wife tonight and these stopped me in my tracks.

I've never smoked these before but they've always been on my mind and this seemed like a really good deal. Buy 1 get 2 free so I essentially paid $15.00 for about 11 lbs.

Anyhow, I plan on smoking about 4 lbs on Saturday and freezing the rest for another time. I'm going to dig through the archives but it sounds like you basically just rub them down and smoke until about 170??

Looking forward to this smoke. We planning on ribs but they just took a backseat for these.

I have had really good luck with these at 260* for about 3 hours. Directly on the grate. Then I put them in a foil pan with 1/2 apple juice and 1/2 Jeff's sauce. Use enough of the braise to come up to at least half the thickness of the ribs. Cover the pan with foil and cook for another hour. Let rest for about 30 minutes and they are great.

Good luck. If you don't like these, send me the left overs. Joe. :grilling_smilie:

Well that definitely makes it easy. Thank you for sharing Richie!
Thank you Joe! The way to smoke these sounds very similar to ribs. Hopefully they taste just as good! haha

I can't wait to get going - rain or shine!

    Ready for the wrap.

For the liquid, I reduced down some apricot, grape and apple jams, then added some water. I did this the last time I smoked ribs and it seemed to turn out really good.

Couldn't resist adding some chicken legs.

Crisping up the chicken skin from left over coals. Direct heat on the WSM. Versatile smoker!

All done now and, well, CSRs are dy-no-mite!  Chicken legs are always good. The veggies turned out yummy as well. Glad I picked those CSRs up at the grocery store. I'm definitely sold!

I never know what I'm going to get in regards to a smoke ring but these developed a nice one.

And my final plate. Time to chow!

Thank you very much Foam! You know, I took your advice and pigged out. In fact, just to be honest, I finished up the meal with quite a few double stuffed Oreos! lol
Hi Joe, many thanks. Everything really tasted well and now I'm super glad I still have 7lbs. of CSRs in the freezers. Really good stuff.

Thank you Richie! We have some leftovers for today, going to warm them up in a hour or so.

Also, I was surprised at how much CSRs taste like ribs!
