Well the first time I used it I smoked a turkey breast, and I had the charcoal tray all the way up, and the temps seemed pretty even, though it only lasted an hour or two then as well. I also didn't have a chimney to add more hot coals then either.
GOT14U, in your signature the picture on the left, what is that? Do you have a post somewhere on how to make that? Looks really good.

The one I have, that came with it has no probe, I thought maybe having a good one with a probe may give me a better reading since it extends down closer to the grill. I just wasn't sure if there should be a specific length?
