Also gives me an idea----Roll out sausage, pizza cut, and freeze. Hmmmmm----Brain's starting to work again.
5 lb ground pork butt Med grind
1 T + 2 tsp pickling salt (or salt to taste)
1.5 t course ground (Tellicherry) black pepper
1.5 t ground (Indonesia)white pepper
1 T rubbed sage
1.5 t ground ginger
1.5 t ground Nutmeg
1.5 t ground Thyme
1.5 t Smoked Spanish Paprika
6 oz distilled water
Mix all together and extrude thru stuffer or jerky gun. Freezes well.
