Butt Smoke w/JD Stuffed Bell Peppers

    Happy Sunday to everyone. Decided to do a butt today along with some JD stuffed bell peppers. Above is the butt after the usual Tony C's and a bit of crushed basil. Something just a bit different.



    Above, the buttski on the smoker getting ready to inhale all of that mesquite goodness. And last but not least, the bell peppers after final assembly. I put a piece of havarti cheese in first, then some JD, another chunk of cheese, more JD, then topped with a bit of Mayan onion.

    Good looking grub so far, Mikey. I thought the addition of the onions to the water pan was interesting ... neat idea! [​IMG]

    Here's the butt after unfoiling. Sorry for the blur. I pulled it off the smoker @160 and finished it in the gas fired metal box until 195, then let it rest. I used straight mesquite, and it's quite good. Below it's pulled along with the JD stuffed bell peppers. This is a good combo, but the next time I will poke a few holes in the bell peppers to let the grease out. Should make a big difference.

    That's some good looking PP and peppers! I agree with you on poking some drain holes in the peppers. Thanks for sharing.
