  1. I wanted to post something so; I don't have a smoker as of yet but Santa is getting me a Brinkmann vertical charcoal smoker, the one with 2 doors. I know it's not the best but I enjoy a challenge. I have already planned to construct a sheet metal outer enclosure around the smoker section and the top to contain 1 1/2" of fiberglass insulatuion. I also will modify the firebox for better airflow. I will certainly post pics sometime in Jan. with the project and costs.
For now I've been trying to smoke with my propane grill with limited success. I do not seem to be able to generate enough smoke. This weekend I'm going to try a 2# pork tenderloin on the rotisserie. I'm going to remove one of the grates and set my pan of apple wood much closer to the burner. In order to maintain 225 to 250' I need to use 2 of the 3 burners so I'll use the outer 2 burners. The burner below the wood will have to be on high and the other to low.
Hopefully I'll have the "QVUE" thing down by the end of the week and I'll post pics of the results.
If anyone has any suggestions those would be much appreciated.
BTW I have subscribed to the 5 day smoking basics program, got Jeffs rub and sauce recipies and thanks to all for the warm welcome to the site.

You should try ot smoke on the grill by using half of the burners and not the others. Just use one side of the burner and put some wood chips near the fire but not too close that they catch fire so a happy medium. Then place your meat on the cold side of the grill and let it run and see if that works better for you. So cann't you you know bribe santa and get the smoker early maybe. If not the BEG.
