I finally got my long awaited delivery of short ribs from my friends farm yesterday...I've generally braised them to date,this time I figured I'd give them the low & slow smoke treatment. Sprinkled with SPOG and placed in the fridge for an hour...then into the smoker for the 3-2-1 treatment. Threw some SBT's in there also.. . . . .6 hrs later.. .. . . . . All in all they were pretty tasty...fell of the bone nicely. Personally I think i prefer them braised. The SBT's on the other hand were sensational. Even the wife, who doesn't dig peppers, chowed down 3 of them.
