I saw an instagram post about smoked Beef Belly. Anyone have any experience with this?
I caught a bit of Steve Raichlen's PBS show last night, and he was smoking a " beef navel ". I believe it is a section of the brisket. His Project Smoke series is available on line. Hope you can find some info there.
Are you thinking of beef bacon, pastrami, or something else ?
