Top O' the morn to you laddies and laddices,

Tomorrow I'm going to smoke-a-tize two racks of BB ribs in my MES at 225 for however long it takes using hickory.  I'd like them to take as much smoke as possible in ~3 hours so right now I have them in the fridge mellowing with no rub.  I'll leave until late tonight or early tomorrow then rub them up.  Will the sit time allow a pellicle to form so they absorb smoke well or should I have rubbed them first?

Thanks...Smokey

Thanks Mule. My plan was to rub with EVOO or mustard after they sat and then put the spice rub on hour or so before smoking. That should work right?

That's what I do, pull em out of the fridge, pull the membrane off rub them with a little EVOO or mustard then season
