3lb strip roast

  1. Going to be smoking this bad boy today. Using pecan and apple wood.
    the rub is just Montreal steak seasoning sat over night.

  3. a little hot but can be adjusted!
    in my cheapo char-broil. Will smoke till meat is 130 or so let it rest. Then sear on grill.

    been on for a hour sitting at 100 degrees. Also for the first 30 min did heavy pecan smoke then apple hoping the apple gives it a sweetness to balance the peppery seasoning!
