    Pretty much correct. A plate opens above the firebox then you put in a searing grate and turn up the flame. The searing grate can cook using the flat side or the other to give score marks. Used the flat side for my ribeye reverse sear and it made a great crust in short time on each side.

    I looked at the Grilla Grill too. They looked good but again, I wanted the direct flame grilling option. I read very good reviews on the GGs though. Enjoy.

    Thanks for your help on this topic guys.  I ended up getting the FireCraft Q450.  I'll share some pics as I'm able to do some cooks on it.  So far I did a reverse sear rib eye that was amazing and we did a whole chicken that came out very tender.  Need to brine it next time just didn't have time...

    Price on butts/shoulders

    I just got 3 cases today for $1.73 per lb. and they are boned. The boned price was only $.10 per pound more.  Figure with the time saved and the weight loss from bone the extra dime was worth it.  A couple months ago I was afraid $2.40 would be the best I could find for my sausage making.

    It's a small amount of tender quick but I had always wondered about that as well. (Just checked recipe and it actually called for sugar cure not TQ)  I don't know if it got written down wrong years ago or what.  Maybe that should be sugar instead of additional cure? I'm mixing and stuffing...

    Yes, good find! I've had the same LEM #25 mixer for several years now and it works very well.  If you have an LEM grinder, it will attach and you don't have to crank by hand.

    Thanks Dan. Sorry but the German sausage recipe is an old one that's been in the family for many years and I can't give out. The ingredients however are pretty basic... Salt, pepper, garlic, TenderQuick and pink cure.
