    Easy Overnight brisket

    Have 12 lb packer seasoned w/ SPOG. into 250 degree MES40 w/  full AMNPS at 5 pm for 4 hrs . Dropped the heat to 235 and went to bed.  Got up at 6 am and could run a 12" bamboo skewer into it  like butter. wrapped in foil w/ some low sodium beef broth to cool. will reheat tonight
