    Smoked Black Beans

I was talking to a friend who had some smoked black beans & rice at a restaurant down in Mexico while on vacation. I have smoked Cowboy beans in a big pan before - but thinking that I could:  - buy the canned black beans,  - drain all the liquid out,  - pour them onto a perforated (fine)...

    Smoked Ice (cubes) with Q-View

It sounded so interesting that I had to try it for my Sunday Football Game Bloody Mary.  Glad I did.  Took a couple of hours to melt, used Apple wood. 3-4 smokes cubes (along with plain ice) in a Pint glass seems to be right..... 5 was too smoky, 2 was not smoky enough. If you take your time...

    I've learned the hardway

Short story: Twas the Sunday before Thanksgiving, and it was 15 degrees in Wisconsin. The pork butts and meatloaf went in at 4:00 am to be ready for the 12:00 game. The Brinkman Vertical smoker, all wrapped in mattress pads and canvas (a custom jacket) wasn't keeping the heat at 250 degrees...

I owe my neighbor a favor - and he wants me to smoke him up a bunch of turkey necks. Not having ever considered this a food, I am a little at a loss here. Anything special need to be done? Will use a mix of hickory and apple wood (or maybe mesquite/apple) with my normal liquid of...
