I plan to use a small clean rack/grate to sit my cheese on to avoid black marks like you're talking about. I'll be using old racks from toaster ovens, but cooling racks should be fairly easy to find, affordable and easy to clean afterwards.

Be sure to do a few plain 'naked' fatties as well.... people also go crazy over them, too. Just unwrap and into the smoker. Easiest no-work smoked snack you'll ever make.
We used the rebar ties on our UDS charcoal basket as well. I thought they might wear out fast because of the heat, but we've used the UDS just about every weekend since it was completed in January and the ties have held up exceptionally well.

I recall the old 'bacon grease' tins... know I saw one at my grandmothers house and yep, frying was done with bacon grease and it was always added to cornbread... scrambled eggs in bacon grease... yum.

Brian - same here, I never had pastrami (I'm 41) until I made my own, inspired by several posts here. I also don't have anything to compare it to... but taking some to my father-in-law tonight for his review...

I freeze fatties all the time. We always smoke several at a time, both stuffed and plain then pack the frozen ones with us to friends' houses, lake weekends, other places where we want to enjoy and share the goodness of fatties.
Also freeze buckboard bacon and Canadian bacon too...
What about cedar planks? Would they work in this situation or does it need to be a more intense heat... and if they would work in a smoker, anyone have any tips?
We see good salmon deals at our supermarket, it's also one of those things I'd like to try...
