Oh my! An over whelming response that causes me less work!
I did use aluminum foil on the water pan and drip pan and cleaned the grates before putting everything in the dishwasher.

I love it when a good plan comes together!
After some difficulty getting my new MES to create smoke I switched to dry chips and started them smoking (burning) with a small torch before i closed the unit. Then when it was time to add new chips via the feed tube they smoked on thier own.

Instruction Manual says to wipe with a damp cloth. I find that a bit difficult with some of the splatter. I used soap and water and reseasoned, but that seems a bit much also!

It appears the 'good' deal I got on the MES might not have been quite as good as I had hoped.
When I attempted to season the unit the heating element never came on. The dispaly panel worked and seemed to function correctly for setting the time and temperature but no heat.
