Problem keeping AMNPS lit in MES 30"

Thanks, Todd & Bear.  I'm purely a hot smoker, and here in Georgia, it's almost always hot and w/o wind so maybe that's my issue.  I'll try Bear's advice and spend some extra time getting it really hot.  I've been doing some of that, but not 15-20 minutes worth...closer to the 5-10 Todd...

Problem keeping AMNPS lit in MES 30"

I'll have to try the chimney!  So far, I've used the AMNPS in my MES30 twice and each time, I ended up having to remove the chip tray, chip loader, AND put the AMNPS on top of the element housing (instead of the rails to the left of it).  I've even had to occasionally put a fan near the smoker...

    ABT Prep question

Quick question...I searched but did not find the answer.  Is it ok to prep the ABT's the night before?   I'm doing an overnight smoke of pulled pork Friday night, but won't have much time in the morning to prep the ABT's to go on after the pork is done.  I was going to core the peppers, cook...

    brisket stall help

To complete the story, I put the smoker probe on the oven rack while the brisket was finishing up.  It fluctuated between 225-250.  For instance, when I first put it in, the heat kicked on in the oven to regain the temp.  The smoker probe started climbing..ending at about 255.  However, when the...

    brisket stall help

Thanks, Al.  I had checked with a few different meat probes, all agreed with the 145.  I did calibrate the meat probes last week (in icy and then boiling water).  While they weren't dead on, they were pretty close.  I did order a new Maverick (since I was having trouble finding replacement...

    brisket stall help

One other note was about water.  I had initially filled the water pan and had a pan underneath the brisket with a little broth (to catch the drippings).  After having trouble with the AMNPS and finding Todd's post about *NOT* using the water pan, I took it out, but poured about 1/2 the water...

    brisket stall help

Hello all, I need a little advice here.  I was working on my second (ever) brisket last night (the first meat attempted with my new AMNPS) on my MES30.  I put the meat on around 7:30 pm last night.  I had a few issues with getting the AMNPS lit (had to keep taking it out, relighting, adjusting...

    Price of Brisket

Just ran by Publix here in the Atlanta area...was marked at $5.99/lb.  I headed over to Costco where it was $5.29/lb (trimmed).  I asked if they had any whole ones in the back (untrimmed) and he came out with 2-3 beauties...especially since they were $3.69/lb!  I grabbed an 8 pounder and will...

MES question about rib cook time (now w/Q-view)

Here's the remaining q-view pics: After taking out of foil: After final time in smoker: Right before they disappeared: My friends loved them, but I learned a few things for next time (besides to remember the hot water tip): 1) Ribs don't need as much rub as a butt...I felt it was...

MES question about rib cook time (now w/Q-view)

I bet that was it.  In my previous smokes, I had used hot water (thanks to that tip by fine folks like yourself) and had no real issues with recovery time.  Today, however, I forgot and just ran it cold out of the tap.  Argh! Oh well, I let it go a little longer in the first phase and it looked...
