Had a preheated smoker after doing a batch of Scarbelly Peanuts so I decided to take advantage of it.
Opened up a pack of boneless skinless chicken breast and butterflied them. Made up a mixture of cream cheese, shredded smoked monterey jack, Franks Red Hot Buffalo Wing Sauce, and Jeff's Rub (Didn't measure anything, just winged it). Spread mixture on the butterflied breasts, sliced up a couple of pieces of my back bacon and added that to it, then folded the breasts back over. Toothpicked the breasts shut, then sprinkled some of Jeff's Rub on bottom and top of breasts.
Smoked for 2 hours with hickory at around 250*F.
Served with a quick smoked beans (basically, opened a can of Bush's into a foil pan, added Jeff's Rub and some of my back bacon chopped up) that I added to the WSM while I made up the breasts.
Turned out great! Delicious and quick and took care of that mid-week smoke craving..
