Yes all you do is gut them and deep fry them, very nice snack. I have also smoked them but I prefer them deep fried.
When I lived up in the Twin Cities, you could buy them whole, with heads on and guts included. I couldn't figure out why anyone would buy them that way until someone told me some people actually fried them (and ate them) that way! I don't think I could do that!

I'll also add, my grandpa called them schmelt, not smelt. I'm not sure if that was his German heritage showing or if a lot of people pronounced it that way.

When I was a young one back in the 60's we would go out and get 5 gallon buckets of them. I mean tons an of them. Mom would cut their heads off and run them through the old washing machine wringer and the guts would end up in the tub and the meat placed somewhere else. LOL
The left overs would be spread out in the garden for Fertilizer. Every seagull in 50 miles would come for lunch.
