I would appreciate recipes for both. A friend of my son gave me a turkey (35# live weight) that I didn't have time to pluck so I just skinned it out. Thought I would be a little creative & make sausage but have a hard time finding recipes that look good. They said I was in good hands but after what I read I wonder.

I have a spicey recipe that I made a small batch of that everybody seems to like. I'm going to make a bigger

batch & change a few things for my liking. The only thing I'm having problems with is it is a little dry but not

that bad. I guess I'm just use to the texture of pork. If this batch turns out I'll post the recipe. I'm always looking

for tried & true recipes if you still want to post 1. THANKS
 
Here is the original recipe

2 1/2 # turkey meat (I used thighs)

4 tsp. choopped garlic

6 tsp. chili powder

1 Tbs. paprika

2 tsp. cayenne pepper

2 tsp. ground cumin

1 tsp. crushed red pepper

1 tsp. oregano

1 tsp. thyme

1 tsp. coarse black pepper

2 tsp. onion powder

1/2 tsp. garlic powder

here is what I added for smoking it

1/2 c. water

1/4 c. evoo

1/2 c. dried milk

3 3/4 tsp. TQ

with the oil it is not as dry but is also not as firm
