So, I woke up Friday morning (08/18) and immediately wrote down a recipe I had in a dream. I made it last night, and again tonight, because it was so good.

If you love the sweet and salty combo, you gotta try this. 10 min prep. 15 min cook.

Oh, and it would absolutely work with cooked thick cut bacon, too.

Sweet Potato and Ham Tacos

I literally dreamt this last night (08/17‐18/2023). Tried it and we both loved it! Great flavor.

Makes 4-6 tacos.

Ingredients
1 large red sweet potato, peeled, chopped ½"
2 Tbs oil
1 tsp salt
½ large onion, chopped
1 lb ham, chopped
8" Flour tortillas
Maple syrup drizzle
Trader Joe's Sour Cream (optional)

Directions
Heat oil in 10" skillet. Once hot, add the sweet potatoes. Cover with splash guard and sauté for 6-8 minutes, turning every 2 minutes.

Add the onions and stir into the potatoes. Sauté until they start to turn translucent.

Add the ham. Stir into the potatoes and onions. Sauté to cook off most of the liquid.

Spoon onto a warm flour tortilla and drizzle with maple syrup. Add sour cream, if desired.

Wrap and enjoy.

Hey, Jim. Thanks. There was only enough for one taco after the first night. I cooked the leftovers into scrambled eggs the next morning. Another way to yum these.

Now that a different take on a taco. They look good Ray.
Brian, I absolutely agree. I've never made or eaten tacos like this, and I've eaten and made tacos for decades.

In Korean sweet and salty is Danjjandanjjan. Dan Jan Dan Jan. There I taught you something.

In my dream, I was in another country eating poorly made, horrible tasting food while arguing with the cook. I looked around his kitchen and grabbed three things plus the tortillas, cooking it over an open fire in a frying pan. I woke up and wrote what I remembered. Then made it that night.

My wife is not a sweet and salty fan, but she loved these.
