I had gotten 4 frozen trout from HEB. Thawed and put in Pop's low salt brine for 24 hr. Smoked in MES at 180 with tube filled with Cherry chips and smokehouse pellets in mailbox. Now what to use in?

Looks very tasty. I'd prolly have a few fish tacos. I wonder if you could make a nice smoked fish dip with it?

I've been a trout fisherman my entire life, and that is a classic way to smoke them. Did the backbone lift right out?

I've had some very good dips, and fish cakes... but I'm usually fine with some crackers or bagel chips.

I have this theory that people that claim to not like trout, really mean they hate the bones, especially the pesky super fine pin bones. So I go out of my way to completely de-bone fillets that I fry, smoke or can. Here is a full skeleton.

I made salmon patties yesterday. I'd probably just eat them as is but a patty is good eats. I like to do em like a burger. Mayo and ketchup on a grilled bun.

People say they don't like salmon or trout patties but when you don't use that canned fish gunk it's delicious.

I will every once in a while used canned, but not often. I miss the days when salmon and trout were affordable. Costs more than ribeye here.

YUP, I love a good feed of Trout, Miss my yearly fishing trips with my Dad.

To me Brian , that right there sir is a big dish of lovely finger food , thats just how I roll with that picture lol
