We have a chili cookoff today at work. I've got several chili recipes in the vault, but after looking at the sign up list on Friday, I decided to do something a little different. After some brief searching I cam across this recipe.
3 lbs ground chuck (80/20)
1 lbs thick cut bacon
Chili powder
Cumin
Corriander
Oregano
Salt
Crushed black pepper
Plablano pepper
Red Bell pepper
Jalapeno pepper
Chipotle peppers
Yellow onions
Garlic
Pinto beans
Tomato puree
Tomato diced
Beer
Smoked the burgers and bacon (a little apple wood)
Prep the other ingridients
Everybody in the pot
Cook it down
Finished product
It has a good flavor. I will probably grill the burgers next time vs. smoking them. The smoke flavor is pretty strong, but still really good. I might add a couple other things to get it a little more spicy next time, but for a first go I would grade it out at a strong B.
