Hi,
My name is Joe and i have been smoking using a Brinkman electric dome smoker for many many years. Had it perfected for time and temperature and was perfect out of box but then moved to Florida and didn't take with me. Kids bought me a Masterbuilt 30" basic smoker model 20071012 for Xmas . Working on my 3rd rack which is on now and not been satisfied with the other 2. Gauge is inaccurate, and on/off thermostat has too wide a swings for me. Bought a remote sensor for meat and also one for rack temperature. Installed a variable speed router controller and now am able to hold the temperature within about 5 degrees during smoke. Went back to basics and not using water, rub or foil as i read Smokin Al did on this site. Hopeful I will have results in an hour as my temperature is 220 and meat temperature is 181 heading for 195. I only opened once for a picture after 4 hours. Thanks for all the wonderful reading and tips on this site.

Welcome Joe, glad to have you on the forum. Lotta folks here have the MES so info is easily obtained. Look'in forward to seeing you cooks and input.

Thanks for the welcome. Smoker temp is now 223 and internal meat temperature is now 188 so hopefully will be eating perfect ribs in another hour. It has been on 6 hours so far and opened only once with temperatures ranging 220-227 as the excitement mounts which is welcomed at my age. :)
 
Where in FL are you Joe? I travel full time in an RV and spend my winters in Jupiter. I have a MES 30 as well.

Hi Pete,
Gave up Rving in 2014. Traveled from KY by RV for 10 years to John Prince Park in Lake Worth FL where we spent the winter Settled in the Villages Florida now along with 7 other couples who met every year in RV campground in Lake Worth. It was a great life but this place is even better. ;)
JUST ATE THE RIBS AND THEY WHERE MOIST, TENDER AND SUCCULENT. TOOK 6 1/2 HOURS. Only thing the wife didn't like was the Bark that formed and she prefers less smoke taste. Otherwise they were gre...eeatt.
