My name is Joe and i have been smoking using a Brinkman electric dome smoker for many many years. Had it perfected for time and temperature and was perfect out of box but then moved to Florida and didn't take with me. Kids bought me a Masterbuilt 30" basic smoker model 20071012 for Xmas . Working on my 3rd rack which is on now and not been satisfied with the other 2. Gauge is inaccurate, and on/off thermostat has too wide a swings for me. Bought a remote sensor for meat and also one for rack temperature. Installed a variable speed router controller and now am able to hold the temperature within about 5 degrees during smoke. Went back to basics and not using water, rub or foil as i read Smokin Al did on this site. Hopeful I will have results in an hour as my temperature is 220 and meat temperature is 181 heading for 195. I only opened once for a picture after 4 hours. Thanks for all the wonderful reading and tips on this site.
