    Its mainly a northeast thing.

    Yup, made with a hogs head meat, some livers, hearts , kidneys, corn meal and buckwheat meal.

    Kinda like yankee head cheese with ground grain for glue. Seems its usually cornmeal if I remember right. We don't usually have it in the south, its a northern treat thought.

    What was your binder C-Man? Kinda looks like either whole wheat or maybe oats?

    I think I remember Bearcarver had his recipe posted some time past. I have had it when I lived in Vermont and it was killer. Heart attack on a plate.

    We used cornmeal and buckwheat flour.

    Ahhhh.... did you not read of the USDA's reversal I think last week or the week before on Cholestral? Its a wording thingie.... Now its saturated Fats vs, Chlorestal.

    I lived in NJ when I was a little kid and ate it all the time.I knew what it was from Pic#1. It took me about 28 years to find it in S.Florida..
