I have some homemade dark maple sugar and a 5lb chunk of belly.

Doing to use a dry cure with #1, what % of maple sugar you all recommend??

I am thinking 2.5 - 3% of meat weight.
 
I have no idea,but it sounds like a good idea! I would like to try bacon but I'm scared how much I would eat if it's better then store bought as I eat too much already!
