So a few recent post made me realize I had been neglecting my Mini WSM.

SWMBO had a desire for Chimichurri steak. A local Puerto Rican place here does it with skirt steak, but the grocery store didn't have any on Saturday, so I grabbed a London broil and figured I'd give it a shot.

Ran the mini at 235ish with a few mesquite chunks for about 1:45 till IT hit 128, , pulled off the pot, stoked up the fire a bit and did a little sear on the meat.



Plated with the Chimichurri, a little rice and chopped salad.
 
I get so excited smelling my smoker that I forget about presentation. That looks fantastic!
