Well! Here it is, almost noon. I turned off the heat at 9am and let them sit. Then at 11:30 I unwrapped them and they are perfect for slicing, but a little pink for choppin', so I made big cuts in them, poured some sauce on them and put them back in at 300 for maybe, 30-45 minutes. I hope I'm not destroying them! They were still too hot to pick up at 1130, so I'm thinking the internal should not take long to bring up a little.
