Has anyone ever done this(lots of pix)

Had to try out the new Hastybake Friday. The Okette calls it our "baby grill".

I thought I'd do a stuffed boneless chicken. I didn't think about taking pix until after I boned the bird and it occurred to me that some of you might be interested in a visual play by play of that process. All I can say is that I'll try to remember next time.

In the meantime, here is a play by play of the stuffing, cooking and slicing.


Boned bird with meat stuffing applied


stitching begun @ the tail end


stitched stuffed bird with wing meat protruding


Wing meat inserted back into cavity for even cooking


Tail and leg tips stitched together


Stitched, stuffed, rubbed, and ready for the heat.


On the heat and lookin good, and don't forget the rubbed smoked taters!


Gotta have a little Jack Millers

It's not lunch time yet! Good looking stuffed bird. That Hastybake does good work. Congrats on the find Okie.
 
Damn!! Them are some of the finest vittles I've ever seen!! I hope my key board doesn't short out from me droolin' all over it!

Looks like a sausage mix.
 
I buy "dressing stock" from Hebert's Meats (a Cajun specialty shop out of Baton Rouge). It's a concoction of dark roux, ground giblets, trinity, seasonings etc. (I'm working on cloning it, but I've got a ways to go).

And Mike, I'll do the play by play if you'll run the camera.

I mix that with some egg, ground pork, veggies and seasoning.
 
You'd never know they were in there. They're all ground up an cooked down. It's kinda like a seasoning paste.
 
Good to see that your staying out of trouble...LOL. Thanx for the tongs PM. Been pretty busy with some Navy brass lately. We have a new toy to play with...nuff said.
