Picked up a 3.5 pound corned beef brisket flat as they were on sale this week. Soaked in 7up for 15 hours, pulled, rinsed, and patted dry. Applied Trader Joe's coffee rub to all sides. Put in smoker at 250 for 8 hours with a little apple cider vinegar in the pan with water. This piece never did hit a stall and after 8 hours I pulled with an IT of 196. Foiled it and wrapped in towels and to the cooler it went for an hour and a half. Sliced like a dream. So tender, so juicy, so easy. Can't wait to do this again. I used a blend of apple and cherry chips and it was a hit! On a side note we threw a few pies from Walmart in for an hour. Some good, some ok, all gone!
